Huila grows more coffee than any other region in Colombia. Most of it comes from small cooperatives: families working plots of a few hectares between 1,500 and 1,900 meters, fully washed in the traditional style. "Supremo" is Colombia's largest screen grade, which means an even, clean roast. This lot blends Typica (the classical Arabica, sweet and balanced) with Castillo, a hardier variety bred in Colombia itself. It's the cup most people picture when they think "Colombian coffee": balanced and easy to drink.
Cup: caramel, dark chocolate, orange, lemon zest. Medium acidity, medium body.
Roast & Brewing: medium roast. Suited to both espresso and filter. As espresso it drinks chocolatey and full-bodied; in a V60 or Chemex the citrus side comes forward. Ratio: 1:16 for filter, 1:2 for espresso.
Why we chose it: We were looking for a Colombian coffee for everyday drinking: one that keeps its character and delivers clean, distinct flavors. Huila is where we landed.
