Yirgacheffe is a small town in Ethiopia's Sidama region, a name tied to one of the most recognizable profiles in filter coffee. The coffees here come from heirloom varieties: dozens of local landraces, most never formally catalogued. They grow at high altitude and are washed in the traditional style, and that altitude gives the bean its concentrated fruit and wine character. It's the cup most people picture when they think of Ethiopian filter coffee.

Cup: Winy character, lemon, ripe fruit, grape sweetness. Bright acidity and an intense, long-lasting finish.

Roast & Brewing: Light roast. To keep its aromatic identity intact, this coffee leans toward filter brewing: V60 or Chemex at 1:16. It can be tried as espresso, but it shows its real character on filter.

Why we chose it: For us, Yirgacheffe is Ethiopia's calling card: bright and winy, the kind of cup you remember.
