Evolution Blend brings together two coffees from two continents: Colombia and Ethiopia. One comes from South America, the other from Africa; one is washed, the other natural. When these two characters meet at a medium roast, the result is a full-bodied espresso close to bitter chocolate. Its low acidity and strong, creamy body leave a taste that lingers after every sip. It's built for espresso, though filter drinkers will enjoy it too.
Cup: Chocolate aroma; chocolate, nutty notes, bitter caramel. Low acidity, strong and creamy body.
Roast & Brewing: Medium roast. Built first for espresso (1:2 ratio), but it also brews well on filter (1:16). Either way, the body and chocolate come forward.
Why we chose it: We wanted a base that holds its own both as a straight shot and under milk. Evolution does that: chocolatey and low in acidity, and it holds up beneath steamed milk.
