Mutation is a filter blend that brings two coffees together in equal parts: 50% Colombia, 50% Ethiopia Yirgacheffe. Both are fully washed, which gives the cup a clean, clear character. The Colombia carries the balance and the smoothness; the Yirgacheffe adds a fruity lift on top. The result is a coffee that sits in balance between acidity and body, easy to drink. For anyone who wants filter coffee to be a pleasure, not a challenge.

Cup: Spice and milk chocolate aroma, fruity flavors. Balanced acidity, medium body, smooth to drink.

Roast & Brewing: Light roast, made for filter. V60 or Chemex at 1:16. Its balance makes for a forgiving brew.

Why we chose it: Filter coffee often lands either too sharp or too demanding. We blended Mutation to find the middle: balanced and smooth, fruity without asking too much of you.
