Geisha is rarely associated with Brazil, and that is exactly what makes Fazenda Santuario Sul so unique. In Carmo de Minas, Luiz Paulo Pereira and his partners grow more than thirty exotic varieties under a shade canopy, Geisha among them. The farm is a perennial finalist at the Brazil Cup of Excellence, and this lot placed sixth. The cherries ferment anaerobically in sealed tanks, then dry as a natural. Grown between 1,000 and 1,300 meters.
Cup: Sparkling wine, green grape, orange, apricot, brown sugar. Medium-high acidity, delicate body.
Roast & Brewing: Light roast. A delicate, aromatic Geisha made for filter. V60 or Chemex at 1:16. Its layers open up best as a pour-over.
