Las Lajas sits on the foothills of the Poás Volcano in Costa Rica, a benchmark for specialty coffee since 1988. When a 2009 earthquake cut off water and electricity, Óscar Chacón and Francisca Cubillo had to move beyond washed processing, and Perla Negra was born from that necessity. The ripest cherries are hand-selected, sun-dried in thin layers on raised beds, then rested in shade. Twenty-two to thirty days of drying, sixty or more of resting. H10 Milenio variety, grown at 1,550 meters, scored 94 at Coffee Review.
Cup: Raspberry jam, cherry, cocoa, citrus zest, honey, dark chocolate. Bright acidity, silky body.
Roast & Brewing: Light roast. A coffee that shows its complexity on filter: V60 or Chemex at 1:16. The fruit layers of the natural process open up best with a pour-over.
