Gigi Manis means 'sweet tooth' in Indonesian, and this coffee earns the name. In Kluncing, a village in the Bondowoso region of East Java, nearly everyone farms coffee, a tradition that goes back to Dutch colonial times. Supriyanto, known as Mas Iyan, has grown coffee since 2006 and started developing his own processing methods in 2016. At his plot on Gunung Suket, at 1,700 meters, he puts Orange Bourbon cherries through 120 hours of anaerobic fermentation. That long, controlled process opens up the sugars inside the bean, layer by layer.
Cup: Pomegranate, cherry, nashi pear, sweet confection. Silky body, sweet finish.
Roast & Brewing: light roast. Filter brewing brings out the fruit and sweetness of the anaerobic process. V60 or Chemex at 1:16.
